Food - glorious food - Filipino style is a mixture of eastern cuisines with a few strange temptations. The following
selected examples of Filipino favorites are available at most local restaurants on Boracay - give some of them a try.

Seafood: a wide selection of lobsters, crabs, prawns and fish are available throughout the year, try the following
fish - cooked as per your request - grilled , charbroiled , steamed or pan fried.

Lapu: Lapu - Lapu (Grouper) , Blue Marlin or Tanigue.

Kilawin: fresh raw fish , marinated in spicy vinegar.

Lumpia: small mouth popping spring rolls with egg - veg filling , deep fried in a wrap of thin crepe.

Pancit: steaming noodles garnished with selected meat and veg toppings. The noodles maybe - Bihon ( rice noodles) ,
Canton ( flour noodles) or Sotanghon (soyabean noodles).

Lechon: spit roasted pig considered the national dish of the Philippines.

Chicken /Pork Adobo: considered the favorite dish of the Philippines. Meat in rich dark stew marinated in vinegar
and soy sauce .

Bagoong: small shrimp paste fermented in salt .

Chicharon: pork skin prepared into crackling .

Beef Caldereta: thick brown stew

Bangus: smoked Milk Fish ( similar to English Kippers) - great for a good breakfast start to a busy day .

Sinigang: salty sour soup flavored with Tamarind .

Beef tapa: thin slices of near dried beef .

Kangkong: marsh spinach.

Balot: boiled fertilized and incubated , 12 - 16 day old , duck egg . The locals claim it puts the spring back into your
legs after the big event .

Deserts:

Leche flan: egg custard

Langka: jackfruit

Halo-halo: Summer favorite. Refreshing mixture of fruit, jellies and yam served in tall glass with crushed ice and milk.
